Presentazione

Laura Esposito earned her bachelor’s degree in Food Science and Technology in 2021 and her master’s degree in Food Science and Technology in 2023 from the University of Parma. Since January 2024, she has been a Ph.D. student in Food Science at the University of Parma, in the food chemistry group, under the supervision of Prof. Tullia Tedeschi. Her research focuses on the valorization and characterization of the protein fraction of food byproducts, intending to promote their sustainable reuse and the development of value-added ingredients.
