Research
Research areas
Research focuses on dietary fibre, with particular emphasis on the extraction, fractionation, and chemical-structural characterization. Particular interest is devoted to the valorisation of sustainable biomasses and to the development of analytical approaches for investigating conventional and emerging dietary fibres, including chitin.
