Research topics
Prof. Galaverna has been studying food chemistry and food safety for 25+ years, with a particular focus on bioactive compounds and xenobiotics. He has applied several innovative chromatographic and mass spectrometry methodologies to study the occurrence of bioactive food components and the effect of processing technologies on their chemical modifications. His main field of research is related to natural bioactive compounds and natural toxins, with a special focus on mycotoxins. In this field, he focused his scientific activities on the occurrence and transformations of mycotoxins in food and feed, and on their metabolic fate in planta and in mammals (humans). Moreover, he applied targeted and untargeted analytical approach for the profiling of volatile and non-volatile compounds in food as well as metabolites in plants and humans. In recent years, research has expanded to include the sustainability of food systems and agri-food production.

  • Partecipazione, su selezione di Ateneo, al programma TTAccelerator 2025 del Network PerfeTTO con il progetto “Recover, Activate, Reuse” (brevetto "Produzione di antimicrobici da scarti vegetali")

    Il programma TT Accelerator offre un percorso di accelerazione con mentorship qualificate, consulenze tecniche e formazione per colmare lacune specifiche e contribuire alla valorizzazione dei risultati della ricerca: un percorso che viene erogato esclusivamente agli Spoke che candidano progetti meritevoli tramite i TTO (Technology Transfer Office, Uffici di trasferimento tecnologico). L'Università di Parma si è presentata con il progetto “Recover, Activate, Reuse” relativo al brevetto di Ateneo n. 102019000006815 “Produzione di antimicrobici da scarti vegetali”). Ha vinto la selezione e parteciperà ad un programma di sei mesi a partire dal 14 gennaio 2026.

    Evento di divulgazione scientifica sulla dieta mediterranea con contributo relativo al progetto PRIMA-EU MoreMedDiet (More on the adoption of a healthy Mediterranean diet, finanziato nella Call PRIMA 2022 Sezione 2, durata: 01.06.2023-31.05.2026), di cui UNIPR è partner e che ha come obiettivo generale quello di promuovere l'adozione della dieta mediterranea (MedDiet) attraverso una serie di azioni, tra cui lo studio del comportamento dei consumatori, la progettazione e lo sviluppo di nuove ricette in grado di attrarre il consumo in particolare dei giovani, l'ottimizzazione dei processi produttivi, l'implementazione di sistemi di tracciabilità digitale, la creazione di nuovi modelli di business, la valutazione dell'impatto sulla salute e sulle abitudini di consumo, la creazione di contenuti educativi e l'influenza sulle politiche e sulle strategie nutrizionali.

    Un libro che è un viaggio alla scoperta delle basi molecolari, chimiche, del flavor degli alimenti, attraverso la comprensione della fisiologia che sta alla base delle nostre percezioni, degli effetti dei processi di trasformazione (ad esempio la cottura), che utilizziamo per modificare o produrre nuovi sapori e rendere più appetibili i cibi, e dell’influenza che le esperienze personali, la cultura e la società hanno sulle nostre scelte alimentari, fornendo nel contempo uno strumento per rivisitare e interpretare la quotidianità del mangiare e del bere attraverso le molecole del gusto.
